Test Kitchen – Fake Soy Sauce – Round 2

The last time I did this, I was convinced I could make a fake soy sauce out of browned mushrooms. And to be painfully honest, it was just okay. It worked like I needed it to for the handful of recipes I utilized it in… but, it still didn’t taste quite enough like soy to make me happy…. in other words – it still tasted like mushrooms. So, I’ve decided to go back the beginning and see if I could bolster those existing fake soy recipes out there and give them what they are all lacking – body / richness / stainable color / umami (god, I hate that word.) First things First ONE – ALL non-soy recipes are essentially the same. Boullion, Vinegar, Spices, Water. – so I’m not listing the original recipe from any particular source… (google “fake soy” and the window fills up with recipes)… I picked one at random just to get the general proportions. TWO – I’ve used good to excellent quality ingredients. Meaning, it isn’t going to be cheap to buy …

Forget Sugar Cookies

 “The children were all nestled – snug in their beds. While visions of Kilcher Homestead Ginger – Molasses Cookies danced in their heads..”    THESE are the cookies Santa really wants…. So, with our newly rekindled love affair with butter fully into the “Third Base” kind of thing – (yes, yes, we’re getting nekkid and rolling around in it…) – I’ve been on the hunt for any type of cookie that : A). doesn’t have nuts (the hickory nuts ended up being a bust – causing a delayed reaction a full week later) and B). doesn’t have chocolate and C). Kitchen Fodder Guest Test – Micro Pressure Cooker Mac ‘n’ Cheese

Bah! Humbug! Alright…. I’m not the happiest elf this time of year – and getting my chops in gear to do anything other than just exist, is damned near impossible… (I’m just not your holiday food guy.) Luckily, in talking to my sis today, I found out she was using her Microwave Pressure Cooker to make… of all things… MAC n CHEESE! I roped her into doing a guest post (slash) recipe test on it for Plate Fodder. So… Go grab a bowl of popcorn and get ready to be amazed!
