Snacktime! ~ Honeycomb Popped Corn

I like me some Caramel Corn. However, the thought of popping corn, cooking a syrup, mixing it up, then baking it for 45 minutes to an hour JUST to get it where you can eat it… is  WAY more effort than I want to put in a snack. Over a year ago while Jane and I were poking around some odd curb market, we came across a dry mix for caramel popcorn. The idea was to heat your butter and kernels in the whirly popcorn popper thing, pour in the dry mix… and Voila!, caramel corn. You know… it actually worked. Unfortunately, I don’t remember where we got it…. and I didn’t keep the bottle after it was empty… and any of the alternatives I’ve been able to find on the  internetowebbyversothing  have just a HUGE amount of artificial ingredients and colorants. I decided I could make my own.. and it be JUST as good, and healthier than the manufactured stuff…. … you know… if you discount the copious amounts of butter… and sugar. Honeycomb …

Gluten Free / Dairy Free “Sour Cream” Brownies

There is a couple I know that each time we talk, it seems there is yet another food ingredient that gets added to their ever-growing list of allergies. I know from allergies. You’ve read in the past that later in my dad’s life, he became sensitive, allergic and down right toxic to several common everyday foods. It became a constant and vigilant effort to read every ingredient for the assaulting foods in his list just to make sure that some innocuous corn by-product or nut wasn’t going to shut down his neuro transmitters and transport him into a near Alzheimer state. It became necessary to create work-arounds for a lot of the things he liked to eat, because I am a firm believer that just because you “can’t” have something you love, doesn’t mean that I “shouldn’t” find a way to make something else taste like it. The Gift

It arrived today. I don’t really know what I was expecting. But, it wasn’t this… I recently reconnected (after a 25 year lapse) with an old friend. And for the past month or so, we’ve been trying to get together to catch up. But with varying schedules, 750 miles, and a lifetime dividing us, getting together just hasn’t been all that easy. I don’t want to hear it. I’ve already told you that I live my life in episode. If you aren’t in front of me, I get side-tracked… time slips away… and you become a ghost in the machine. There’s nothing sinister about it, I just lose sight of you. This past Sunday, after another failed attempt, Andy asked for my address, “I want to send you a gift.
